Chia Pudding and the Blueberry Smoothie

Keeping in the theme of Healthy Weight Week, we’ve chosen recipes from the Scandinavian Belly Fat Program by Berit Nordstrand.

Here we have a guilt free dessert – Chia Pudding!

Ingredients

350ml reduced-fat coconut milk
2 tablespoons honey
½ teaspoon vanilla seeds
½ teaspoon almond extract
100g chia seeds
Handful colourful berries
Mint or lemon balm leaves

Method

Whisk together the coconut milk, honey, vanilla seeds and almond extract. Stir in the chia seeds. Divide the mixture between 4 dessert glasses, cover and refrigerate for at least 1 hour until set. Take the glasses out of the fridge 15 minutes before serving so that they reach room temperature. The puddings are best eaten the day they are made. Serve topped with berries and mint or lemon balm leaves.

Blueberry Smoothie

Ingredients

2 kiwi fruit
200 g frozen blueberries
1 banana
1 orange, diced
100 ml (3½ fl oz) apple juice (not from concentrate), if you’d like a sweeter smoothie

Method

Put the kiwi fruit, blueberries, banana, orange and apple juice (if using) in a blender, and process to a smooth, even consistency.
