Chia Pudding and the Blueberry Smoothie

Keeping in the theme of Healthy Weight Week, we’ve chosen recipes from the Scandinavian Belly Fat Program by Berit Nordstrand.

In her book, Berit sets clear, short-term goals to help you to reduce your belly fat over 12 weeks.

There are more than 65 recipes that speed up the rate at which your body burns fat, increase your muscle mass and help you reach your ideal, healthy waist size

Here we have a guilt free dessert – Chia Pudding!

350ml reduced-fat coconut milk
2 tablespoons honey
½ teaspoon vanilla seeds
½ teaspoon almond extract
100g chia seeds
Handful colourful berries
Mint or lemon balm leaves

Whisk together the coconut milk, honey, vanilla seeds and almond extract. Stir in the chia seeds. Divide the mixture between 4 dessert glasses, cover and refrigerate for at least 1 hour until set. Take the glasses out of the fridge 15 minutes before serving so that they reach room temperature. The puddings are best eaten the day they are made. Serve topped with berries and mint or lemon balm leaves.
