Poke Bowls (poh-kay)

The hottest food trend of 2017 is undoubtedly the Poke (poh-kay) Bowl. With restaurants popping up across the country entirely dedicated to the latest food craze, we jumped on board the Poke train to deliver you an easy-to-make recipe in the comfort of your own home.

This DIY Poke Bowl is not only friendly to your budget, but to your waistline too!

Serves 3
Prep time: 15 minutes
Cook time: 20 minutes

The lowdown..
Per 1 1/4-cup serving: 258 calories, 13gm fat (2gm saturated), 24.2 gm carbs, 632mg sodium, 7gm fibre, 3gm sugar, 14gm protein

You will need…
– 2/3 cup short grain brown rice
– 1 medium cucumber, cut into thin slices
– 1 avocado, pitted and cut into thin slices
– 1/2 cup shelled edamame
– 1/2 cup shredded carrot
– 1 1/2 tblspns pickled ginger
– 3 1/2 oz smoked salmon, cut into small pieces
– 1 tablespoon sesame seeds
– 1 sheet nori, cut into thin strips
– 1 teaspoon wasabi paste (optional)
– 1/4 cup rice vinegar
– 2 tablespoons soy sauce (or tamari for gluten-free)

Preparation:

1. Cook the brown rice as per the package instructions. Once cooked, remove from heat and allow to completely cool.

2. In a large bowl, combine the rice with the cucumber, avocado, edamame, shredded carrot, pickled ginger, smoked salmon and sesame seeds.

3. In a small bowl, whisk together the wasabi paste (optional), rice vinegar and soy sauce.

4. Just before serving, toss the salad with the dressing and top with the strips of nori.

5. Arrange it in a pretty fashion (similar to above).
